My favorite green chili recipe for burritos

1/2 onion sweated down in 1/2 cup light oil
add 1/2 cup flour and make a roux and cook till golden brown
add 1 tablespoon kosher salt
add 1/2 gallon roasted peeled and diced green chilis
add 1 gallon water and bring to a boil
add 1 table spoon kosher salt
cook for 1 hour and adjust for salt
