Santa Fe XMas red chili

Saute 1/2 diced onion and 1 clove of garlic in 1/2 cup of oil till translucent

Add 1 tablespoon oregano and 1 cup of bread crumbs and continue to cook for 5 more minutes

Add 2 cups of red chili powder and 1 tablespoon kosher salt and cook on medium heat to toast and refresh the red chili powder, about 5 more minutes

Slowly add water 1 cup at a time, about 6 cups,  and let mixture come to a boil before adding the next cup of water and do this until you still have a thick mixture but not too thick because it will thicken up more as it cooks and simmer this for about 15 minutes

Take your mixing wand and puree the chili until it is the perfect beautiful consistency of enchilada sauce that you are looking for, adjust for salt and pour over your favorite duck enchiladas, pork carnitas tamales or carne asada burritos
